Quick Butternut Squash
&
Wild Rice Soup

 

QUICK BUTTERNUT SQUASH & WILD RICE SOUP

Approximate cooking time: 20-30 minutes

Ingredients:

  • 1 32 oz box premade butternut squash soup like Pacific Natural Foods Organic Soup, Creamy Butternut Squash
  • 1 can 13.5 oz coconut milk
  • 1-2 cup pre cooked wild rice
  • 2 cloves minced garlic
  • Salt and pepper to taste
  • Optional: meat of your choice, like turkey

 

 

 

Directions:

In a large sauce pan, warm on medium heat 32 oz of premade butternut squash soup and garlic until it begins to bubble.  Add coconut milk and stir until thoroughly mixed and begins to bubble again.  Add pre-cooked wild rice and serve.

 

Note: You may also add meat, such as turkey or quail. Be sure to cook the meat before adding it to the soup.
